Ingredients

 1 pound boneless beef round steak, trimmed, cut into 4 pieces, and pounded 1/4 inch thick, or 1 pound cubed beef steaks
 Black pepper1/2 Teaspoon
 Salt1/4 Teaspoon
 Egg1 Large
 Egg white1 Large
 Milk fat1/4 Cup (16 tbs)
 All purpose flour1/2 Cup (16 tbs)
 Vegetable oil2 Tablespoon
 1 tablespoon unsalted butter or margarine
 2 green onions, with tops, sliced (1/4 cup)
 Milk fat1 Cup (16 tbs) (For the gravy:)
 All purpose flour2 Tablespoon (For the gravy:)
 Half and Half1/2 Cup (16 tbs) (For the gravy:)
 Worcestershire sauce1 Teaspoon (For the gravy:)
 Red cayenne pepper1/8 Teaspoon (For the gravy:)

Directions

1. Season the steaks with the pepper and salt. In a small shallow bowl, beat the whole egg, egg white, and milk. Dip the steaks into this mixture, then into the flour, shaking off any excess.
2. In a heavy 12-inch skillet, heat the oil over high heat. Add the steaks and cook for 3 minutes on each side or until golden brown. Transfer to a warm platter and cover with foil.
3. To prepare the gravy: In the same skillet, melt the butter over moderately high heat. Add the green onions and saute for 3 minutes. In a small bowl, whisk the milk and flour until smooth, add the mixture to the skillet with the remaining ingredients, and bring to a boil, stirring constantly. Lower the heat and simmer, uncovered, for 3 minutes or until the gravy has thickened slightly, then spoon over the steaks. Serve with Cajun Corn.
