Southern Fried Steak Recipe
Ingredients
| 1 pound boneless beef round steak, trimmed, cut into 4 pieces, and pounded 1/4 inch thick, or 1 pound cubed beef steaks | ||

| Salt | 1/4 Teaspoon | |
| Egg | 1 Large | |
| Egg white | 1 Large | |
| Milk fat | 1/4 Cup (16 tbs) | |
| All purpose flour | 1/2 Cup (16 tbs) | |
| Vegetable oil | 2 Tablespoon | |
| 1 tablespoon unsalted butter or margarine | ||
| 2 green onions, with tops, sliced (1/4 cup) | ||
| Milk fat | 1 Cup (16 tbs) (For the gravy:) | |
| All purpose flour | 2 Tablespoon (For the gravy:) | |
| Half and Half | 1/2 Cup (16 tbs) (For the gravy:) | |
| Worcestershire sauce | 1 Teaspoon (For the gravy:) | |
| Red cayenne pepper | 1/8 Teaspoon (For the gravy:) | |
Directions
1. Season the steaks with the pepper and salt. In a small shallow bowl, beat the whole egg, egg white, and milk. Dip the steaks into this mixture, then into the flour, shaking off any excess.
2. In a heavy 12-inch skillet, heat the oil over high heat. Add the steaks and cook for 3 minutes on each side or until golden brown. Transfer to a warm platter and cover with foil.
3. To prepare the gravy: In the same skillet, melt the butter over moderately high heat. Add the green onions and saute for 3 minutes. In a small bowl, whisk the milk and flour until smooth, add the mixture to the skillet with the remaining ingredients, and bring to a boil, stirring constantly. Lower the heat and simmer, uncovered, for 3 minutes or until the gravy has thickened slightly, then spoon over the steaks. Serve with Cajun Corn.
