 Frying chicken1 , cut up
 All purpose flour155 Gram
 Salt1 1⁄2 Teaspoon
 Pepper3⁄4 Teaspoon
 Butter/Margarine1⁄4 Cup (4 tbs)
 Shortening1⁄4 Cup (4 tbs)
 Milk2 Cup (32 tbs)

Directions

Wash chicken and dry on absorbent paper.
Roll in 1/2 cup flour seasoned with salt and pepper.
Melt butter and shortening in skillet.
Add chicken and brown quickly on all sides.
Reduce heat, cover, and continue cooking for 25 minutes, or until tender, turning occasionally.
Remove cover during last 10 minutes of cooking.
Drain on absorbent paper and arrange on hot platter.
To make gravy, drain off all but 2 tablespoons fat.
Add 2 tablespoons flour and the milk and cook until thickened, stirring constantly.
Season to taste.
