Southern Cream Cake Recipe

Ingredients

 
1 cup whipping cream
 
2 teaspoons vanilla
 
3 medium eggs, well beaten
 
2 cups all purpose flour, sifted
 
1 cup sugar, sifted
 
2 teaspoons baking powder
 
1/2 teaspoon salt
 
1/4 cup good sherry
 
Powdered sugar

Directions

Whip cream until it holds its shape.
Stir in vanilla and eggs.
Mix and sift remaining ingredients (except sherry), and add a little at a time to cream mixture, folding in gently.
Spoon into well sprayed china or glass 10 inch bundt cake pan.
Cover with wax paper.
Cook in Radarange oven 7 to 8 minutes.
Turn cake a quarter turn every 2 minutes.
Turn out on rack.
Spoon sherry over cake, and let stand 10 to 12 minutes.
Dust cake with powdered sugar.
Can be served with a berry sauce, possibly strawberry.
