Southern Anatolian Coffee Recipe

Ingredients
Very finely ground dark roast coffee - 1 1/4 cups
Granulated cane sugar - 6 tbsp
Cardamom pods - 12
Directions
MAKING
1 In a long handled, Turkish coffee pot, or an enameled saucepan, pour 3 1/2 cups water.
2 Add the coffee, sugar, and the cardamom pods.
3 Stir well and heat slowly to boiling point over a gentle heat.
4 As soon as the liquid boils, remove the saucepan off the heat.
5 Allow to stand for 30 seconds, until the foam on the top subsides.
6 Return to the heat and remove again as soon as the liquid returns to a boil.
7 Let stand again and then return to the heat once more and vring to a boil.
SERVING
8 Pour in individual cups and serve hot.
