South American Quinoa Muffins Recipe
Ingredients
1 Cup Whole Wheat Flour
1/2 Cup Unbleached Flour
3 Tbsp. Brown Sugar
1 Tbsp. Baking Powder
1 Tsp. Soda
1/2 Tsp. Salt
1/2 Cup Currants
1 Cup Cooked Quinoa
2 Eggs
2 Tbsp. Melted Butter
1 Cup Buttermilk
Directions
Sift together flours, brown sugar, baking powder, soda and salt.
Stir in currants and cooked quinoa.
In another bowl, whisk eggs with melted butter and buttermilk.
Make a well in dry ingredients and add liquid, stirring no more than 10 seconds.
Spoon into greased muffin tins and bake until golden brown.
Bake at 400 degrees 18-20 minutes
