Ingredients
1/4 c. butter
1 c. rice
3 c. chicken broth
1/2 tsp. crumbled saffron threads
12 rock lobster-tails
1 10-oz. package frozen peas
Salt
Paprika
Directions
Melt butter in skillet; saute rice until golden.
Add chicken broth and saffron; cover tightly.
Simmer for 20 minutes.
Drop lobster-tails into boiling salted water.
Cook only until water reboils.
Drain; drench with cold water.
Cut away underside membrane; pull out meat in one piece.
Add lobster meat and peas to rice.
Add additional chicken broth if necessary to prevent sticking.
Cover; simmer for 10 minutes or until peas are cooked.
Season to taste with salt and paprika.
