South Seas Pie Recipe

Ingredients
1/4 cup unsweetened coconut, shredded
9 inch Basic Pie Shell, unbaked
1 cup water
2 tsp cornstarch
1/3 cup mini chocolate chips
4 eggs, slightly beaten
2 tsp granulated sugar
1/4 tsp salt
1 1/2 tsp vanilla extract
1 cup unsalted macadamia nuts, finely chopped
Directions
Press unsweetened coconut into bottom and sides of unbaked pie shell.
Set aside.
Combine water and cornstarch in saucepan, cook and stir over medium heat until mixture is thick and clear.
Remove from heat and stir in mini chocolate chips.
Cool to room temperature.
Add eggs, sugar replacement, salt and vanilla extract.
Beat with electric mixer until fluffy; fold in macadamia nuts.
Pour into pie shell.
Bake 325°F (165°C) for 40 to 45 minutes or until filling is set.
Cool.
