South Of The Border Chicken Soup Recipe
Ingredients
| 1/4 pound bacon, cut into 2-inch pieces | ||
| Onions | 2 Medium, chopped | |
| Cooked and cubed chicken | 1 Cup (16 tbs) | |
| Chopped | 1 Can (10oz), drained | |
| Chicken stock | 1 Quart | |
| Corn tortillas | 12 , cut into wedges | |
| Monterey jack cheese | 1/4 pound, grated | |
Directions
In a large heavy saucepan, fry bacon and onions over medium heat until crisp.
Stir in chicken, green chiiies and stock.
Warm over medium heat and sprinkle with tortillas and grated cheese.
