One of the most favorite South Indian cusine of mine, Sambhar. Goodness of dal and vegetables in one of the simple yet healthy dish!

Directions

Wash and soak toor dal for 2 hours. Pressure cook toor dal alongwith bottlegourd, onion, drumsticks until 1 whitsle.
Wash and soak 4 tsp tamarind in water for 1 hour and extract pulp from it.
Heat oil in a pan, add cumin seeds, mustard seeds, hing, methi seeds, add boiled dal and add tomatoes and chopped eggplant.
Add sambhar masala and red chilli powder. Boil for 10 mts.
Add salt and tamarind extract and cook for another 10 mts.
Serve with Idly, dosa or boiled rice!
