South Indian Lemon Pickle Recipe
South Indian lemon pickle is a spiced lemon pickle. Popular throughout South India, the south indian lemon pickle is spiced with chili peppers and fenugreek along with mustard and has sugar for sweetness. Tangy, peppy and sweet to taste, it goes great with meals as a condiment.
Ingredients
Lemons 750 gms
Salt 3/4 cup
Mustard oil 1 cup
Asafoetida 1/2 tsp,
Mustard seeds 3 tsp
Lemon juice 3/4 cup
Red chilli pepper 2 tsp
Fenugreek powder 3 tsp
Sugar 1/2 cup
Directions
1) Make 8 equal pieces of each cleaned lemon.
2) Rub salt to the lemon pieces and leave for a week in a glass jar shaking it daily.
3) Heat oil in a pan, remove from the fire, cool a little, add crushed asafoetida and mustard seeds and cover the pan.
4) Mix fenugreek powder, chilli powder, lemon juice, sugar and the lemon pieces with the asafoetida and mustard seeds and set aside.
