South India Poached Chicken Recipe
As a lover of chicken, I love it however it comes, but, South India Poached Chicken stands high on my favorite list. I am not sure if it is the addition of ginger or rice vinegar or something else which makes this South India Poached Chicken salad so relishing. Whatever it is, this is one dish which can get real tempting!
Ingredients
1 cup water
1 cup rice vinegar
2 1/4-inch slices ginger
1 clove garlic, minced
2 whole chicken breasts, halved, boned, and skinned
1/2 cup low-fat yogurt
1 tablespoon minced orange rind
Directions
In a shallow 10-inch pan, combine the water, vinegar, 1 piece of ginger, garlic, and chicken and simmer, covered, over low heat.
Allow the liquid to come to a boil then simmer gently.
Total cooking time from when chicken is placed in the pan is 25 minutes.
Remove chicken and keep warm.
Strain poaching liquid.
In a small bowl, combine 2 tablespoons poaching liquid, the yogurt, and orange rind.
Mince the remaining ginger and stir into the sauce.
Allow the liquid to come to a boil then simmer gently.
