South American Chili Beef In Tortillas Recipe
Ingredients
| 1 tablespoon corn oil or safflower oil | ||
| Onion | 1 Cup (16 tbs), chopped | |
| Garlic | 2 Clove (5gm), minced | |
| 2 pounds beef round, cut into small cubes, all fat removed | ||
| All purpose flour | 2 Tablespoon | |
| Green bell pepper | 1 Cup (16 tbs), chopped | |
| Tomato sauce | 1 Cup (16 tbs) | |
| 3 tablespoons canned mild green chilies, chopped | ||
| Red wine vinegar | 2 Tablespoon | |
| 1 teaspoon dried | 2 Teaspoon | |
| Cumin | 1 Teaspoon | |
| Salt | 1/2 Teaspoon | |
| 10 large whole wheat or white flour tortillas | ||
| Lettuce | 2 1/2 Cup (16 tbs), shredded | |
Directions
In a large saucepan heat oil over medium heat.
Add onion and garlic.
Saute until tender.
Add beef.
Saute over medium-high heat for 5 minutes.
Add flour; toss with beef cubes until coated.
Add green pepper, tomato sauce, green chilies, vinegar, oregano, cumin and salt; mix well.
Cover.
Simmer over medium heat for 2 1/2 hours, stirring every 30 minutes.
Uncover.
Simmer for 30 minutes longer or until slightly thickened.
Heat tortillas according to package directions until warm but not crisp.
Onto each tortilla spoon beef mixture.
Add 1/4 cup lettuce to each; roll to enclose filling.
