Directions

Roll up the fish and secure with cocktail sticks (toothpicks).
Put the oil in a dish and cook for 30 seconds. Add the onion and cook for 2 minutes.
Mix the onion with the apple, add the pickling spices and bay leaf and pour over the cider vinegar. Lay the fish on top. Cover with vented cling film (plastic wrap). Cook until the vinegar boils and then for about 3 more minutes, until the fish are done. Leave to cool.
Serve the fish cold with a spoonful of the cooking vinegar and apple and onion slices on top.
