1 cup whole wheat flour, unsifted
 
1 cup all-purpose flour, unsifted
 
1/2 cup sourdough starter, at room temperature
 
2 cups warm buttermilk (about 110°)
 
2 eggs
 
1/4 cup each milk and salad oil
 
2 tablespoons sugar
 
1 teaspoon soda
 
1/2 teaspoon salt
 
Melted butter or margarine

Directions

In a large bowl, combine whole wheat flour, all-purpose flour, starter, and buttermilk; beat until blended.
Cover and let stand at room temperature for about 45 minutes (or cover and refrigerate overnight).
Beat together eggs, milk, and oil.
Add to flour mixture and stir until blended.
Combine sugar, soda, and salt.
Stir into batter, then let stand for 5 minutes.
For waffles, preheat an electric waffle iron.
Bake according to manufacturer's directions until richly browned.
