Ingredients

 Cooked Potatoes – 4 cups, diced
 Cucumber – ½ cup, diced
 Onion – 2 teaspoons, finely minced
 Celery seed1 Teaspoon
 Salt1 1/4 Teaspoon
 Pepper1/4 Teaspoon
 Hard boiled eggs5
 Sour Cream – ½ cup, thick
 Prepared mustard1 Teaspoon (Salad Dressing – ½ cup)

Directions

MAKING
1) In a bowl, mix together the potatoes, cucumber, onion, celery seed, salt and pepper
2) Using a sharp knife, chop the whites of the egg and add to the chopped vegetables
3) Pass the yolks through a sieve and combine with sour cream, salad dressing, vinegar and mustard
4) Add the egg yolk mixture to the potatoes and toss together
5) Place in the refrigerator to chill

SERVING
6) Serve the salad on a bed of crisp greens
