| Cooked Potatoes – 4 cups, diced | ||
| Cucumber – ½ cup, diced | ||
| Onion – 2 teaspoons, finely minced | ||
| Celery seed | 1 Teaspoon | |
| Salt | 1 1/4 Teaspoon | |
| Pepper | 1/4 Teaspoon | |
| Hard boiled eggs | 5 | |
| Sour Cream – ½ cup, thick | ||
| Prepared mustard | 1 Teaspoon (Salad Dressing – ½ cup) | |
Directions
MAKING
1) In a bowl, mix together the potatoes, cucumber, onion, celery seed, salt and pepper
2) Using a sharp knife, chop the whites of the egg and add to the chopped vegetables
3) Pass the yolks through a sieve and combine with sour cream, salad dressing, vinegar and mustard
4) Add the egg yolk mixture to the potatoes and toss together
5) Place in the refrigerator to chill
SERVING
6) Serve the salad on a bed of crisp greens
