Sour Cream-Avocado Salad Recipe
Ingredients
2 pkg. lime gela tin
1 c. sour cream
2 c. mashed ripe avocados
2 tsp. snipped parsley
1/4 c. diced sweet pickle
1 c. mayonnaise
1/2 tsp. Salt
2 tbsp. chopped pimento
2/3 c. chopped salted almonds
Directions
Dissolve gelatin in 1 cup boiling water; cool until partially set.
Combine sour cream, mayonnaise, salt and avocados; blend well.
Add to gelatin; stir until smooth and blended.
Fold in remaining ingredients; turn into 2-quart mold.
Chill until firm.
Serve on mixed greens surrounded with fresh fruits.
