Sour Cream Macaroni Recipe

2 cups (500 mL) macaroni
 
1 cup (250 mL) Cheddar cheese, grated
 
1 cup (250 mL) cottage cheese
 
1/2 cup (125 mL) sour cream or plain yogurt
 
Salt and pepper to taste
 
4 green onions, minced
 
Parsley, minced (to taste)
 
2 tbsp (30 mL) butter

Directions

€¢ Microwave the macaroni according to the Pasta Cooking Chart.
€¢ Mix together the Cheddar and cottage cheese.
€¢ Butter an 8 x 8-inch (20 x 20 cm) microwave-safe baking dish. Put half the cooked macaroni in it and sprinkle with half the cheese.
€¢ Repeat with the remaining macaroni and cheese.
€¢ Mix together the sour cream or yogurt, salt, pepper and green onions. To taste, add minced parsley.
€¢ Dot with butter. Spread over the macaroni.
€¢ Microwave, uncovered, 8 to 10 minutes at MEDIUM.
