Ingredients

 
5 eggs, separated
 
1 1/2 cups chopped cooked ham
 
1 (8 ounce) carton commercial sour cream, divided
 
1/8 teaspoon pepper
 
Vegetable cooking spray

Directions

Beat egg whites with electric mixer until stiff but not dry; set aside.
Beat egg yolks until thick and lemon colored; stir in ham, 1/2 cup sour cream, and pepper.Fold whites into egg yolk mixture.
Coat an ovenproof 10 inch omelet pan or heavy skillet with cooking spray; heat over medium heat until hot enough to sizzle a drop of water.
Pour egg mixture into skillet, and gently smooth surface.
Reduce heat and cook about 5 minutes or until puffy and light brown on bottom, gently lifting omelet at edge to judge color.
Bake at 325° for 15 to 18 minutes or until a knife inserted in center comes out clean.
Tip skillet and loosen omelet with a spatula; fold omelet in half, and place on a warm plate.
