Sour Cream Coffee Cake With Honey Recipe

Ingredients
2 cups ground walnuts, divided
2 1/2 teaspoons ground cinnamon
3/4 cup honey
3/4 cup butter, softened
1 cup honey
3 eggs
2 cups sour cream
2 teaspoons vanilla extract
1 1/2 cups sifted whole wheat pastry flour
1 1/2 cups sifted unbleached white flour
2 teaspoons baking powder
2 teaspoons baking soda
Directions
Preheat oven to 350° F.
Butter a 10-inch tube pan.
In a small bowl, combine 1 1/2 cups walnuts, cinnamon, and 3/4 cup honey.
In a large bowl, beat together butter and 1 cup honey.
Beat in eggs, sour cream, and vanilla.
Sift whole wheat pastry flour and unbleached white flour, baking powder, and baking soda into another large bowl, and then add to sour cream mixture, beating just until blended.
Spread half the batter in prepared pan.
With a lightly oiled rubber spatula, spread walnut-honey mixture on batter.
Top with the rest of the batter, and sprinkle with remaining 1/2 cup walnuts.
Bake on middle shelf of oven for 50 to 60 minutes, or until a cake tester or food pick inserted into the center comes out clean.
