Sour Cherry Preserves Recipe
Ingredients
| 1 pound black or red sour | ||
| 1/2 cup water cherries | ||
| 1/2 lemon, juice of | ||
| Sugar | 2 Cup (16 tbs) | |
Directions
Wash and pit cherries, but keep pits in a small bowl.
Place cherries in a saucepan in layers and sprinkle each layer with sugar.
Add water to the cherry pits, stir slightly, drain, and add this water to the cherries.
Allow mixture to stand for 1 hour, then bring to a boil and simmer for 30 minutes or until syrup thickens to consistency of honey.
Stir gently at intervals while cooking and skim off any scum that rises to top.
Add lemon juice at end of cooking time to prevent syrup from crystallizing.
