Ingredients

 
1 Cup Diced Onions
 
1 Leek, sliced, white part only
 
2 Tbs. Butter
 
1 to 2 Cups Green Beans, cut in 1/2 inch slices
 
1 Cup Diced Potatoes
 
1 Cup Canned Tomatoes
 
6 Cups Beef Broth
 
1/2 Cup Spaghetti, broken up
 
2 Tsp. Salt
 
1 Tsp. Pepper
 
2 Cloves Garlic
 
2 Tsp. Basil
 
1 Tsp. Thyme
 
1/2 Tsp. Sage
 
2 Egg Yolks
 
1/4 Cup Olive Oil
 
2 Tbs. Tomato Paste
 
1/4 Cup Parmesan Cheese

Directions

Saute onions and leek in butter, add beans, potatoes, tomatoes and broth, cook about 15 minutes.
Add spaghetti, salt and pepper and cook until done, approximately 10 minutes.
In a bowl, mash garlic and herbs together, add egg yolks, tomato paste and olive oil.
Add a little soup to this mixture then stir back into soup.
Sprinkle with parmesan and serve.
