Soup De Veau Aux Herbes Recipe
Ingredients
3 tablespoons butter and/or rendered chicken fat
3 tablespoons unbleached flour
7 cups brown veal stock
1 tablespoon finely minced mixed fresh herbs, such as parsley, chives, savory, tarragon, oregano, marjoram
Fresh lemon juice, salt and white pepper to taste
1 recipe Potato Dumplings
Minced fresh parsley
Paprika
Directions
Melt butter until bubbly, stir in flour and cook, stirring, 3 minutes.
Gradually add stock and cook and stir until slightly thickened.
Add herbs, cover and cook at low boil 5 minutes.
Add lemon juice, salt and pepper.
Add dumplings and garnish with parsley and paprika.
