Soupe Au Pistou Recipe
Ingredients
2 quarts boiling water
1 cup dried pea beans
1 bunch of leeks, trimmed, washed, and chopped
2 medium-size potatoes, pared and sliced
1 cup sliced celery
2 medium-size carrots, pared and sliced
3 teaspoons salt
1/4 teaspoon pepper
1 package (10 ounces)
Directions
1 Pour boiling water over dried beans in a kettle or Dutch oven; let stand for 1 hour.
