Ingredients

 
1/4 lb sliced onions
 
1 lb frozen petits pois
 
1 bunch chervil
 
2 tbsp sorrel
 
1/4 lb ham
 
2 egg yolks
 
4 tbsp white port
 
Salt
 
Pepper

Directions

Put the onion in a casserole with the petits pois, still frozen.
Add 21/4 cups (500 ml/18 fl oz) of hot water.
Cover and micro wave on HIGH for 13 minutes.
Rinse the chervil and sorrel and chop separately.
Cut the ham into matchstick (julienne) strips.
Stir the sorrel into the casserole, and microwave on HIGH, for a further 2 minutes.
When the petits pois are tender, puree the mixture in a food processor, then pass through a fine strainer (sieve).
Mix together the egg yolks and the port in a soup tureen.
Pour the pea soup over, stirring constantly with a whisk.
Add 1 cup (250 ml/8 fl oz) of hot water and salt and pepper.
Stir in the ham and the chervil.
