Souffle Broccoli And Corn Recipe

Ingredients
1 1/2 tablespoons cornstarch
3/4 cup skimmed milk
1/2 cup egg substitute
1 cup frozen chopped broccoli, thawed
1 cup frozen corn, thawed
1/2 cup shredded reduced fat Cheddar cheese
1/4 cup snipped chives
1/4 teaspoon grated nutmeg Pinch of ground black pepper
1 egg white, beaten to stiff peaks
Directions
Place the cornstarch in a medium saucepan and slowly whisk in the milk, stirring until the cornstarch is dissolved.
Bring to a boil over medium high heat and boil for 1 minute, stirring constandy.
Remove from the heat and slowly whisk in the egg substitute.
Add the broccoli, corn, 1/4 cup of the Cheddar, chives, nutmeg, and pepper; stir until combined.
Fold in the egg white.Coat an 11" x 17" oval gratin dish with nonstick spray.
Pour the mix ture into the prepared dish and sprinkle with the remaining 1/4 cup of Cheddar.
Bake at 425°F for 15 to 20 minutes, or until puffed and lightly browned.
