Butter Sorrel Soup Recipe

 Sorrel1 Bunch (100gm)
 2 oz very finely chopped, lean smoked bacon
 Butter2 Tablespoon
 All purpose flour3 Tablespoon
 Sugar1 Teaspoon
 Salt To Taste
 Pepper1
 Milk2 1/4 Cup (16 tbs)
 Creme fraiche1/4 Cup (16 tbs)

Directions

Remove the tough stems from the sorrel, rinse the leaves and chop coarsely.
Put the sorrel, bacon and butter into a casserole.
Cover and microwave on HIGH for 3 minutes.
Sift the flour into the casserole and stir well.
Add 2 1/4 cups (500 ml/18 fl oz) of hot water and the sugar.
Season to taste with salt and pepper.
Cover and microwave on HIGH for 3 minutes, stirring every minute with a hand whisk.
Stir in the milk, cover and microwave for a further 4 minutes on HIGH.
Pour the soup into a tureen and add the sour cream (creme fraiche).
Adjust seasoning.
