Sorrel Soup Recipe

Ingredients
1 pound fresh, unbruised sorrel leaves
1/2 cup chopped onion
1/4 cup butter
1 cup light or heavy cream
2 beaten egg yolks
3 cups chicken broth
Salt
Freshly ground black pepper
Directions
Trim the sorrel and rinse well.
Dry the leaves and chop or slice them into thin shreds.
Cook the onion in butter until tender.
Add the sorrel and simmer five minutes, stirring until sorrel is wilted.
Combine the cream and egg yolks and beat until well blended.
Bring the chicken broth to a boil.
Reduce the heat and gradually add the cream, stirring rapidly with a whisk.
Do not boil.
Stir in the chopped sorrel and season the soup with salt and pepper to taste.
