Directions
1. Dissolve the sugar in the water over a gentle heat. Add the strawberry puree with the lemon juice. Chill.
2. Pour the mixture into a plastic or china bowl and cover. Place in the freezer or the frozen food compartment of a refrigerator until it is softly frozen. This takes 2-3 hours in a china bowl and 3-4 hours in a plastic one.
3. When the mixture is ready, whisk the egg whites until they are very stiff, then whisk the sorbet until it is smooth. Fold the egg whites gently and evenly into the sorbet. Pour the sorbet into a plastic box, cover and freeze overnight.
4. Remove from the freezer and stand in the refrigerator for 10-15 minutes before using.
