Ingredients

 
Salad oil
 
8 large whole wheat tortillas
 
Spicy Tomato Sauce
 
1 can refried beans
 
1 can each diced green chili peppers and chopped ripe olives
 
1 large onion, chopped
 
3 cups shredded jack cheese or Cheddar cheese
 
About 3 cups shredded lettuce
 
About 1 cup thinly sliced radishes
 
About 1/2 cup sour cream
 
1 cup alfalfa sprouts

Directions

Place a 10 inch frying pan over medium heat.
Pour oil into pan to a depth of 1/2 inch and heat to 375° on a deep frying thermometer.
Fry one tortilla at a time, turning quickly several times with 2 wide spatulas, until bubbly and just golden (about 30 seconds total).
Lift tortilla and let excess oil drain back into pan; drain on paper towels.
If fried ahead, cool, package airtight in plastic bags, and store up to 2 days at room temperature.
Prepare spicy tomato sauce.
To assemble pizza, gently spread unheated beans in an even layer over each tortilla.
Top each with about 2 tablespoons of the tomato sauce.
Sprinkle chili peppers, olives, and onion over tortillas, then top with shredded cheese.
Arrange on baking sheets.
Bake tortillas in a 350° oven until beans are hot and cheese is bubbly (7 to 10 minutes).
Pass individual bowls of lettuce, radishes, sour cream, and alfalfa sprouts to be spooned over individual servings.
