Som Nam Chim Recipe

Ingredients
500 g sugar
250 ml water
20 rose petals and 1 tsp rosewater
3 to 4 large oranges or mandarins (tangerines), divided into segments, cleaned thoroughly, with all the pith removed
Directions
In a large saucepan, combine the sugar and water and bring the mixture to a boil.
Reduce heat and simmer, stirring gently till all the sugar dissolves and a thick syrup forms.
While boiling, remove any scum that floats to the surface.
Strain the syrup through fine muslin.
Allow it to cool, and then stir in the rosewater.
Place the orange or mandarin segments in a large serving bowl.
Pour the syrup over them.
Garnish with rose petals and serve immediately.
