Ingredients
| 8 ounces sole fillets | ||
| 3 to 4 ounces cooked shrimp | ||
| Butter | 1 Teaspoon | |
| 1 medium onion, sliced into rings | ||
| 1 red sweet pepper, sliced into strips | ||
| Egg | 1 | |
| 2 tablespoons yogurt or sour cream | ||
| Parmesan cheese | 2 Teaspoon, grated | |
Directions
Preheat broiler.
Rinse sole and shrimp, pat dry.
Chop shrimp in small bits.
In a frying pan, heat butter over low heat until foamy.
Add onion and pepper to pan and cover.
Cook slowly over medium heat for 4 to 5 minutes until soft Slide sole on top of vegetables; cover pan and cook for 6 to 8 minutes, until sole is opaque.
While sole is cooking, separate egg; whip egg white until stiff but still glossy.
Fold in yogurt, cheese, and shrimp.
Mound this sauce over sole as soon as it is done, then transfer entire pan to oven; broil 3 to 4 minutes until browned.
