Sole Murat Recipe
Ingredients
3/4 lb. fillets of sole
1/4 cup flour
3 medium-size potatoes, boiled
1/2 lb. artichoke hearts
1/4 cup butter
1/4 cup oil
salt and pepper
juice 1 lemon
1 tablespoon chopped parsley
Directions
1 Cut the fillets into strips 1/4 inch wide by 2 inches long and dredge with flour.
I2 Cut the potatoes and artichokes into strips the same size as the sole strips.
3 Heat the butter and oil in a skillet and saute the strips of sole, potatoes and artichokes for 8-10 minutes. Cover the pan with a lid and toss from time to time. Season with salt and pepper.
4 Arrange the sauteed strips in a serving dish and sprinkle with lemon juice and chopped parsley.
