Ingredients

 Mushrooms3 Cup (16 tbs), sliced
 Salt1/2 Teaspoon
 Pepper1/4 Teaspoon
 1 pound sole or lean fish fillets
 Green onions1/4 Cup (16 tbs), sliced
 3 tablespoons snipped fresh cilantro or 1 tablespoon dried cilantro leaves
 Dry white wine1/4 Cup (16 tbs)
 1/3 cup coarsely crushed zwieback
 2 tablespoons reduced calorie margarine, melted

Directions

Layer mushrooms in rectangular microwavable dish, 12 X 7 1/2 X 2 inches; sprinkle with half of the salt and half of the pepper.
Arrange fish, thickest parts to outside edges, on top; sprinkle with remaining salt and pepper, the green onions and cilantro.
Pour wine around fish.
Cover with vented plastic wrap and microwave on high 4 minutes; rotate dish 1/2 turn.
Uncover and microwave until fish flakes easily with fork, 2 to 4 minutes longer.
Mix zwieback and margarine; sprinkle evenly over fish.
