Sole En Papillote Recipe

Ingredients
1 lb fillets of sole
1 teaspoon salt
1/2 cup thinly sliced mushrooms
1 oz butter or margarine
1 cup dry sherry
1 tablespoon finely chopped onion
1 tablespoon cornflour
1/3 cup cold water
2 tablespoons lemon juice
8 oz prawns, shelled
1 tablespoon finely chopped parsley
Directions
Divide fish into 4 portions and sprinkle with salt.
Saute mushrooms in butter until tender, add sherry and onion.
Blend cornflour with water until smooth, add to mushrooms and stirring continuously, bring to the boil.
Simmer for 1 minute, add lemon juice.
Place each portion of sole on a piece of greased, doubled aluminium foil, cover with prawns.
Turn foil up around fish and pour sauce over the top.
Sprinkle with parsley and wrap fish securely.
Cook over medium hot coals for approximately 20 minutes, or until fish flakes easily with a fork.
