Sole Duglere Recipe

Ingredients
1 lb (500 g) sole fillets
2 tomatoes peeled and diced
1 tsp (5 mL) sugar
1 medium-sized onion diced
1 garlic clove chopped fine
1 tbsp (15 mL) parsley chopped
1 tbsp (15 mL) butter
2 tbsp (30 mL) flour
1/2 cup (125 mL) white wine or white vermouth
Salt and pepper to taste
Directions
Place in a glass or ceramic dish the tomatoes, sugar, onion and garlic.
Mix well.
Microwave 2 minutes at HIGH.
Stir well, add the parsley.
Place the fillets of sole on top of this mixture.
Salt and pepper.
Cover with waxed paper or plastic wrap.
Microwave 6 minutes at HIGH.
Let stand 4 minutes.
Remove the fillets to a hot platter.
Mix the butter and flour together and stir into the tomato mixture.
Mix well.
Add the white wine or vermouth.
Microwave 4 minutes at HIGH, stirring well after 2 minutes.
When sauce is creamy and piping hot, pour over the fish and serve.
Mix well.
Microwave 2 minutes at HIGH.
