Sole Amandine Recipe

Ingredients
1/4 cup blanched slivered almonds
6 tablespoons butter or margarine, divided
4 fillets of sole or flounder
4 fresh tomatoes, chopped
1/2clove garlic, minced
1/2 teaspoon dried tarragon
Salt and pepper
Directions
Heat slivered almonds in V tablespoon butter, stirring con- stantly.
Salt and set aside.
Dust fillets lightly in seasoned flour and brown very quickly on each side in 4 tablespoons of hot butter.
In a different pan cook tomatoes, garlic, remaining butter, tarragon and seasonings for about 1 minute.
Arrange tomato mixture on serving dish and place fillets on top.
Cover with heated almonds.
Salt and set aside.
