Ingredients
| 2 teaspoons each cornstarch and soy sauce | ||
| 3/4 pound sole fillets, cut in 1 by 3-inch strips | ||
| 1 large clove garlic, minced or pressed | ||
| Asparagus | 1 pound (Salad oil) | |
| Water | 2 Tablespoon (Salad oil) | |
Directions
In a small bowl, stir together cornstarch, soy, and 2 teaspoons oil.
Gently stir in fish strips, coating pieces evenly.
Heat 2 tablespoons oil in a wok or wide frying pan over medium-high heat.
When oil is hot, add fish and gently stir-fry until golden (2 to 3 minutes); remove from pan and set aside.
Increase heat to high.
Add 1 more tablespoon oil to pan.
When oil is hot, add garlic and stironce; then add asparagus and stir-fry for 1 minute.
Add water; cover and cook for 2 to 3 minutes.
Return fish to pan and stir-fry just until heated through.
