Sole Strips Verdurette Recipe

Ingredients
1 lb (450 g) fillet of sole
Salt and pepper
2 tbsp (30 ml) butter
2 tbsp (30 ml) French (dry) shallots, chopped
4 tsp (20 ml) chopped watercress
4 tsp (20 ml) chopped parsley
4 tsp (20 ml) chopped fines herbes
1/2 Cup (125 ml) 15% cream
Carrots, diced and steamed
Directions
– Slice fillets of sole into very fine strips and season with salt and pepper.
– In a skillet, melt butter and cook fish over medium heat for 6 minutes, then remove from skillet. Place in serving dish and keep warm.
– Using the same skillet, combine all other ingredients except cream, reduce heat and cook for 2 minutes. Add cream, bring to a boil and let boil for 1 minute. Season with salt and pepper.
– Put the fish in the sauce and reheat gently. Sprinkle with carrots and serve.
