 2 pkgs. (10 oz. each) frozen chopped spinach
 Minced onion2 Tablespoon, dried
 Lemon peel1/2 Teaspoon, grated
 Salt1/2 Teaspoon
 Pepper1/2 Teaspoon
 Dry mustard1/2 Teaspoon
 Parmesan cheese2 Tablespoon, grated
 Parsley flakes1 Teaspoon, dried
 Paprika1/2 Teaspoon
 1 lb. sole fillets

Directions

Place spinach packages in oven.
Microwave at High for 6 to 6/2 minutes, or until packages flex easily.
Rearrange once.
Drain spinach well.
Place in 8 x 8-inch square baking dish.
Stir in onion, lemon peel, salt, pepper and mustard.
Spread spinach mixture evenly over bottom of baking dish.
Combine Parmesan cheese, parsley and paprika.
Set aside.
Place fish on top of spinach mixture.
Cover with wax paper.
Microwave at High for 4 minutes.
Rearrange and sprinkle with Parmesan mixture.
