Sole Florentine Recipe

10 oz fresh spinach, stalks removed, washed, spin dried
1 lb sole fillets
4 oz cream cheese, softened
Salt and pepper
1 tbsp butter
1 tbsp flour
1/2 cup chicken broth

Directions
In a microwave safe bowl, cook spinach 4 minutes, on high.
Drain if needed.
In a shallow rectangular dish, pour spinach.
Set aside.
Spread each fillet with 1 tbsp (15 mL) cheese.
Season with salt and pepper.
Roll.
Arrange fish over spinach.
Cover with a punctured plastic wrap.
Cook 6 minutes, on high.
Let stand 1 minute.
In a pyrex measuring cup, melt butter.
Add flour.
Fold in broth.
Cook 1-2 minutes, on high.
Blend in remaining cheese until smooth, Pour over fillets.
Sprinkle with paprika.
