Sole And Mushroom Bake Recipe
Ingredients
1 lb. sole fillets
2 tsp low-calorie margarine
1/2 lb. mushrooms, sliced
1 onion, chopped
1/4 cup parsley, snipped
1/2 sweet red bell pepper, sliced
1/4 cup dry white wine
Directions
Melt margarine in a skillet.
Saute mushrooms, onion, parsley, and red pepper until soft.
Place sole fillets in a well-greased casserole.
Cover with the vegetables.
Pour on the wine.
Bake, uncovered, at 350°F (175°C) for 15 minutes, Drain off any excess liquid from the food.
Cover casserole and return to oven.
Bake 5 to 10 minutes longer or until sole flakes easily with a fork.
