Sol Kadhi (Kokum soup) Recipe
Konkani cuisine has given us the gift of this amazing Sol Kadhi. Easy to make , very healthy and Kids love it. Sol Kadhi goes very well with roti, rice and is great for any meal.

Ingredients
| Kokum | 6 | |
| Coconut | 1 (milk extracted) | |
| Green chilli | 1 | |
| Cumin seeds | 1⁄2 Teaspoon | |
| Sugar/Powdered jaggery | To Taste | |
| Salt | To Taste (little in quantity) | |
| Cilantro | 1 Teaspoon |
Directions
Soak Kokum in hot water for 1/2 hr. . Grind green chilli and cumin to paste
Once the kokum water turns pink, add coconut milk to it. Depending on how sweet you want to make your kadhi, add jaggery. (I like it sour so I put very little jaggery. ). Add salt. Add cumin-chilli paste. Add cilantro.
In winter, I warm up this Kadhi a bit and enjoy it as a soup.
In summer, enjoy it cold or at room temperature.
Some like to add some garlic or ginger to the cumin-chilli paste.

Wonderful. I shall buy some 'kokum' in the India Store tomorrow (thursday)..thats the fresh veggies day, as you know for many Indian stores in U.S ;)
