Soft Chewy Oatmeal Cookies Recipe

Ingredients
11/2 cups rolled oats
1 cup all-purpose flour
1/2 teaspoon baking soda
1/2 teadpoon baking powder
1/2 teaspoon salt
1/2 cup natural unsweetened applesauce
1/2 cup dark brown sugar firmly packed cup light corn syrup
1 large egg white only beaten
1 teaspoon vanilla extract
3/4 teaspoon ground cinnamon
Directions
Preheat the oven to 350 degrees.
Put the oats, flour, baking soda, baking powder, and salt into a bowl, mix thoroughly, and set aside.
In a large mixing bowl, combine the applesauce, brown sugar, and corn syrup.
Mix until the sugar is completely dissolved.
Stir in the beaten egg white, then the vanilla extract.
Add the cinnamon and the rolled oat mixture.
Stir well.
Fold in the raisins.
With a 1/4 cup measure, scoop level measures of dough onto an ungreased cookie sheet, leaving 2 inches of space between each.
Bake for about 15 minutes, until the edges turn golden brown.
Remove the cookie sheet from the oven and cool for about 1 minute, then transfer the cookies to a rack and cool for 10 to 15 minutes longer.
