Soft Simmered Pork Recipe
Ingredients
| Pork spare ribs | 2 1/4 Pound, cut into pieces | |
| Soy sauce | 4 Tablespoon | |
| Oil | 2 Tablespoon | |
| Ginger | 4 Inch | |
| Sake | 1/2 Cup (16 tbs) | |
| Sugar | 4 Tablespoon | |
| Salt | 1/2 Teaspoon |
Directions
To prepare
1. Sprinkle pork with 1 Tbsp soy sauce. Saute in hot oil until brown on both sides. Transfer immediately to a pan of boiling water for 30 seconds (or pour boiling water over pork) to remove excess oil. Drain.
2. Peel ginger. Slice 2 1/2 inches (6 1/2 cm) into several pieces and crush with a tenderizing mallet or the side of a knife. Cut remaining ginger into very fine slivers and reserve until last step.
3. Place pork, crushed ginger, sake, and 7 cups water in a pressure cooker or heavy saucepan. Simmer 40 minutes in pressure cooker or 3 hours in covered saucepan over low heat.
4. Let pork cool (or force-cool) until fat congeals on surface. Skim off fat.
