Ingredients

 
Loaf:
 
2 cups (500 g) cottage cheese
 
3-1/3 cups (500 g) all-purpose flour
 
2 teaspoons baking powder
 
3 eggs
 
3/4 cup (150 g) sugar
 
1 tablespoon vanilla sugar
 
Pinch of salt
 
1 tablespoon grated lemon peel
 
1 tablespoon chopped almonds
 
1 tablespoon raisins
 
3 tablespoons (25 g) chopped mixed candied fruit
 
3 tablespoons (25 g) chopped mixed candied peel
 
Topping:
 
1 tablespoon (15 g) butter
 
1 tablespoon powdered sugar
 
1 tablespoon vanilla sugar

Directions

Grease and flour a baking sheet.
Preheat oven to 375°F (190°C).
To make loaf, press cottage cheese through a strainer or puree in a blender.
Sift flour with baking powder onto a working surface or into a large bowl; form a well in the center.
Add cottage cheese, eggs, unflavored sugar, vanilla sugar, salt, lemon peel, almonds, raisins and candied fruit and peel.
Mix to a firm dough; knead lightly.
Shape into a loaf; place on prepared baking sheet.
Bake 50 to 60 minutes or until a wooden pick or skewer inserted in center comes out clean.
Transfer to a rack.
To make topping, melt butter and brush over warm loaf.
Mix powdered sugar and vanilla sugar; sift generously over loaf.
