Soda Bread Recipe
Ingredients
4 cups all-purpose flour
1/3 cup sugar
1 tablespoon baking powder
1 teaspoon soda
1 teaspoon salt
1/2 cup butter or margarine
1 1/2 cups raisins
1/2 cup chopped nuts
1 1/3 cups sour milk (add 1 teaspoon vinegar to regular milk)
1 egg
1 tablespoon water
1 egg yolk
Directions
Stir together flour, sugar, baking powder, soda and salt in large mixing bowl.
Cut in butter with a pastry blender until mixture is well blended to a coarse grainy texture.
Stir in raisins and nuts.
Thoroughly mix in milk and egg.
Set into lightly greased 2 1/2-quart casserole.
With a sharp knife, cut an X in top.
Mix water and egg yolk together.
Brush surface of bread.
MICROWAVE 14 to 16 MINUTES on '8', or until center is firm.
Turn out of pan on rack.
Cool completely before serving.
For ovens without solid state heat control, MICROWAVE 11 to 13 MINUTES on HIGH.
