Snowy Chicken Salad Recipe
The snowy chicken salad is a chilled jellied chicken salad made with gelatin and veggies. Prepared with celery and green peppers along with green olives, the snowy chicken salad is flavored with mayo and chicken broth.
Ingredients
| 2 envelopes (2 tablespoons) unflavored gelatin | ||
| Cold water | 1/2 Cup (16 tbs) | |
| Chicken broth | 1 13 3/4 Ounce | |
| Cooked and cubed chicken | 2 1/2 Cup (16 tbs) | |
| 1 cup mayonnaise or salad dressing | ||
| Celery | 1/2 Cup (16 tbs), diced | |
| Green pepper | 1/4 Cup (16 tbs), diced | |
| 3 tablespoons sliced pimiento stuffed green olives | ||
| Lemon juice | 2 Tablespoon | |
| Whipping cream | 1 Cup (16 tbs), Whipped | |
Directions
In saucepan, soften gelatin in cold water.
Stir over low heat till gelatin is dissolved.
Stir in chicken broth.
Chill gelatin mixture till partially set.
Fold in chicken, mayonnaise, celery, green pepper, olives, and lemon juice.
Fold in whipped cream.
Pour into 6 1/2 cup mold.
Chill till firm
