Ingredients

For the dough:

2 cups of flour

3/4 cup of sugar

1/4 teaspoon of vanilla extract

2 large eggs

1 teaspoon of baking powder

A little less than 2/3 cup of oil

Pinch of salt

For the coating:

3 tablespoons of orange blossom water

1 cup of apricot jam (or your favorite fruit jam)

2 cups of natural unsweetened coconut flakes

Directions

For making the cookies:
1- Mix all the dry ingredients together: the flour, sugar, baking powder, and salt.
2- In a separate bowl, beat the eggs with the vanilla extract and the oil.
3- Fold in the flour mixture into the egg mixture.
4- Make small balls with the dough and place them on a baking pan covered with parchment paper.
5- Preheat your oven at 350 degrees and bake the cookies for 15 minutes.
Note: Make sure to keep space between the dough balls as they spread out when baking.

For rolling the cookies:
6- Mix the jam with the orange blossom and microwave for 30 seconds.
7- Dip 2 cookies still hot in the jam mixture, join them together and dip them again in the jam mixture until they are completely covered with jam.
8- Roll the 2 joined cookies in the coconut flakes.
9- Re-do steps 7 and 8 for all the cookies.

Note: these cookies taste even better the next day once they absorb the flavors of the orange blossom and the jam.

Presentation:
