Snow Peas With Mint Sauce Recipe
Ingredients
| 1 pound Chinese pea pods also called snow peas, ends and strings removed | ||
| 1/4 cup each sour cream and mayonnaise | ||
| 2 tablespoons coarsely chopped fresh mint | ||
| Mint sprigs | ||
Directions
In a wide frying pan, bring 2 inches water to a boil over high heat.
Add pea pods and boil gently until bright green about 30 seconds.
Drain pea pods, plunge into ice water, and stir until cool.
Drain again and set aside.
In a food processor or blender, whirl sour cream, mayonnaise, and the 2 tablespoons mint until mint is finely chopped.
Transfer to a small bowl, place in center of a platter, and surround with pea pods.
Garnish with mint sprigs, if desired.
