Snow Peas With Carrots And Red Pepper Recipe
Snow peas with carrots and red pepper is a lightly cooked vegetable recipe. Flavored with lemon juice, the peas, carrots and pepper is seasoned to taste and tossed to serve. Good with no-veg meals of choice.
Ingredients
Nonstick cooking spray
1 tablespoon unsalted margarine
2 medium size carrots, peeled and cut into matchstick strips
1 medium size sweet red pepper, cored, seeded, and cut into matchstick strips
3/4 pound snow peas or Sugar Snap peas, trimmed and strings removed
1/4 teaspoon grated lemon rind
1 teaspoon lemon juice
1/8 teaspoon black pepper
Directions
Coat a heavy 10 inch skillet with the cooking spray; add the margarine and melt over moderate heat.
Add the carrots and red pepper and cook, covered, for 3 minutes.
Add the snow peas, cover, and cook 3 minutes longer or until the vegetables are tender.
Stir in the lemon rind, lemon juice, and black pepper, and serve.
